Tiramisu Cupcakes – Full Recipe!

Ingredients:

For the cupcakes:

1 ½ cups all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

½ cup unsalted butter (softened)

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup milk

2 tbsp strong brewed espresso (cooled)

For the coffee soak:

½ cup strong brewed espresso (cooled)

2 tbsp coffee liqueur (optional)

For the mascarpone frosting:

8 oz mascarpone cheese (room temperature)

1 ½ cups heavy cream

½ cup powdered sugar

1 tsp vanilla extract

Cocoa powder for dusting

Instructions:

1. Make the cupcakes:

1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

2. In a bowl, whisk together flour, baking powder, and salt.

3. In another bowl, cream together softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined. Stir in the cooled espresso.

5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.

1. In a small bowl, combine the cooled espresso and coffee liqueur (if using).

2. Once the cupcakes have cooled, use a fork to poke small holes in the top of each cupcake.

3. Spoon the coffee soak over the cupcakes, letting it soak in.

3. Make the mascarpone frosting:

1. In a mixing bowl, beat mascarpone cheese until smooth.

2. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.

3. Gently fold the whipped cream into the mascarpone cheese until fully combined.

4. Pipe or spread the mascarpone frosting on top of each soaked cupcake.

4. Finish and serve:

1. Dust each cupcake with cocoa powder for that signature Tiramisu look.
