Banana Pudding Cheesecake Bars

Ingredients:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 cups heavy cream
  • 1 box (3.4 oz) vanilla pudding mix
  • 1 box graham crackers, crushed
  • 4 ripe bananas, sliced
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for whipped cream)

Instructions:

  1. Prepare the crust:
    • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • Crush the graham crackers into fine crumbs. Mix with 1/4 cup sugar, then press the mixture into the bottom of the prepared dish.
    • Bake for 10 minutes, then remove from the oven and let it cool completely.
  2. Prepare the cheesecake filling:
    • In a large mixing bowl, beat together the softened cream cheese, 1/4 cup sugar, and vanilla extract until smooth.
    • In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
    • Fold the whipped cream into the cream cheese mixture until fully combined.
    • Add the vanilla pudding mix to the cream cheese mixture and continue to fold until everything is smooth.
  3. Assemble the bars:
    • Layer the sliced bananas evenly over the cooled graham cracker crust.
    • Pour the cheesecake mixture over the banana layer, spreading it evenly to cover.
  4. Chill and serve:
    • Refrigerate the bars for at least 4 hours, or overnight, until set.
    • Slice into squares and serve chilled.
