Cherry Cheesecake Bars

Ingredients:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups sour cream
  • 1/2 cup graham cracker crumbs
  • 1 can (21 oz) cherry pie filling
  • 1/4 cup melted butter

Instructions:

  1. Prepare the crust:
    • Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
    • Mix the graham cracker crumbs, melted butter, and sugar in a bowl. Press this mixture into the bottom of the prepared pan to form the crust.
    • Bake the crust for 10 minutes, then remove from the oven and let it cool.
  2. Prepare the cheesecake filling:
    • In a large bowl, beat the softened cream cheese and sugar together until smooth. Add the vanilla extract and sour cream, then beat until combined.
  3. Assemble the bars:
    • Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly.
    • Bake for 25-30 minutes, or until the center is set and the top is lightly golden.
  4. Cool and top:
    • Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours.
    • Once chilled, top with the cherry pie filling and serve.
