Ingredients:
- 1 box yellow cake mix (plus ingredients called for on the box)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions:

- Prepare the cupcakes:
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Prepare the yellow cake batter according to the instructions on the cake mix box. Fill each cupcake liner about 2/3 full with batter.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely.
- Make the whipped cream filling:
- In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Set aside in the refrigerator while you prepare the chocolate ganache.
- Make the chocolate ganache:
- In a microwave-safe bowl, heat the semi-sweet chocolate chips in 30-second intervals, stirring in between, until completely melted and smooth.
- Assemble the cupcakes:
- Once the cupcakes are cooled, use a small knife or a cupcake corer to cut a hole in the center of each cupcake.
- Fill the center of each cupcake with a generous spoonful of whipped cream filling.
- Drizzle the melted chocolate ganache over the top of each cupcake, letting it spill over the edges.
- Serve:
- Allow the ganache to set for a few minutes, then serve. Store any leftovers in an airtight container in the refrigerator.
