Brownie Bottom Mini Cheesecakes :

Who can resist the heavenly combo of rich, fudgy brownies and creamy cheesecake? These Brownie Bottom Mini Cheesecakes are the ultimate treat for chocolate and cheesecake lovers! Perfect for parties, gatherings, or just a sweet indulgence at home.

Ingredients:


For the brownie base:

 1/2 cup (115g) butter, melted

 1/2 cup (100g) sugar

 1/4 cup (25g) cocoa powder

 1 egg

 1/3 cup (40g) flour

 1/4 tsp salt

 1/2 tsp vanilla extract

For the cheesecake layer:

 8 oz (225g) cream cheese, softened

 1/4 cup (50g) sugar

 1 egg

 1/2 tsp vanilla extract

 Instructions:

1- Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners.

2- In a bowl, mix melted butter, sugar, and cocoa powder. Stir in the egg, vanilla, flour, and salt until smooth.

3- Spoon a tablespoon of brownie batter into each muffin cup and bake for 5 minutes.

4-While the brownie base bakes, beat cream cheese and sugar until creamy. Add the egg and vanilla, mixing until smooth.

5-Remove the brownie bases from the oven and spoon the cheesecake mixture on top.

6- Bake for 15-18 minutes or until the cheesecake is set.

7- Let cool completely, then chill in the fridge for at least 2 hours before serving.

 Top with whipped cream, chocolate drizzle, or fresh berries for extra deliciousness!
