Irresistible Boston Cream Pie Cupcakes

Ingredients:

  • 1 box yellow cake mix (plus ingredients called for on the box)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Prepare the cupcakes:
    • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
    • Prepare the yellow cake batter according to the instructions on the cake mix box. Fill each cupcake liner about 2/3 full with batter.
    • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely.
  2. Make the whipped cream filling:
    • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
    • Set aside in the refrigerator while you prepare the chocolate ganache.
  3. Make the chocolate ganache:
    • In a microwave-safe bowl, heat the semi-sweet chocolate chips in 30-second intervals, stirring in between, until completely melted and smooth.
  4. Assemble the cupcakes:
    • Once the cupcakes are cooled, use a small knife or a cupcake corer to cut a hole in the center of each cupcake.
    • Fill the center of each cupcake with a generous spoonful of whipped cream filling.
    • Drizzle the melted chocolate ganache over the top of each cupcake, letting it spill over the edges.
  5. Serve:
    • Allow the ganache to set for a few minutes, then serve. Store any leftovers in an airtight container in the refrigerator.
